Recipes: Fruit Parfaits & Granola

Granola

  • 6 Tablespoons maple syrup
  • 1 Tablespoon vegetable oil
  • ¼ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1 cup old-fashioned rolled oats
  • ¼ cup sunflower seeds
  • ¼ cup pepitas

Preheat oven to 325F. Line a half sheet tray with parchment paper. Spray with pan spray and set aside.

In a medium stainless steel mixing bowl place maple syrup, vegetable oil, kosher salt, ground cinnamon and whisk the ingredients together. Add old-fashioned rolled oats, sunflower seeds, and pepitas and mix together using a rubber spatula.

Scatter mixture on baking sheet and bake until crisp and golden, 20-30 minutes.

Fruit Parfaits

I like to leave everything layered as written to keep the granola crunchy. But it's very pretty to make alternating layers of yogurt, fruit and granola. You can switch out the granola and fruit to make these parfaits more seasonal: stewed apples and maple granola for the fall, leftover cranberry sauce with vanilla yogurt in December ... Alison Roman has a fairly savory and nutty turmeric granola that makes for a less sweet breakfast pair that with some blueberry jam for a bright treat!

  • 1 cup plain yogurt
  • 1 Tablespoon jam or 1/4 cup chopped fresh fruit
  • 2 teaspoons chia seeds
  • 1/2 cup granola
  • Flaky salt (optional)

Spoon the yogurt into a mason jar (or something similar).

Top with jam and spread it into a thin layer.

Sprinkle with chia seeds.

Top with granola and a sprinkle of flaky salt
