Serves 6
- 1 small red onion, thinly sliced
- 4 tomatoes or 8 Roma tomatoes
- 1 English cucumber, partially peeled and sliced into rounds or half moons
- 1 bell pepper, cored and large diced
- 1 cup pitted Kalamata olives
- salt and pepper to taste
- 1 teaspoons dried oregano
- 1/4 cup extra virgin olive oil
- 2 Tablespoons red wine vinegar
- 7oz feta, broken into large pieces.
- 1 Tablespoon fresh oregano for garnish
Directions:
Soak the onion in cold water (optional: add a splash of vinegar) While those are soaking prepare the other ingredients.
Place the vegetables and olives in a large bowl or platter. Add salt, pepper, oregano, olive oil, red wine vinegar and drained onions. Gently toss together. Taste and add more salt or pepper. Scatter the cheese and fresh oregano on top before serving.
Optional: these are not traditional but they are tasty! Add 1 Tablespoon capers & 2 pepperonicnis sliced.
