We first discovered this overlooked cut of pork at the tiny grocery meat market near our cabin in the north woods of Wisconsin. Hungry for something to throw on the grill, we decided to give it a whirl and are so glad we did! Juicy and super rich in flavor, this cut is taken from the shoulder blade and has a high fat content with plenty of marbling compared to other pork cuts. Season it. Rub it. Marinate it. Grill it to medium rare over a hot bed of charcoals. Mouthwatering goodness even as we write this description!
