Puff pastry, also known as pâte feuilletée, is lovingly made by hand in our kitchen. The light, flaky pastry, has a base dough (détrempe) that is composed of wheat flour and water. Grassland Butter (go, Wisconsin) is then layered into the dough. The dough is repeatedly rolled and folded, rested, rerolled and folded, encasing the butter between each luscious layer.
