Unlike a standard salad where microgreens are an afterthought, this uses them as the main "leaf."
Ingredients:
- 4 cups kohlrabi microgreens
- 1 thinly sliced green apple (for crunch)
- feta cheese
- sliced almonds
Dressing: Whisk 3 tbsp olive oil, 1 tbsp white balsamic vinegar, and a touch of honey finish with salt and pepper for taste.
Instructions:

- Toss the microgreens very gently with the dressing just before serving to avoid wilting.
- Top with apple slices and cheese. The delicate, cabbage-like notes of the kohlrabi greens will dominate every bite.
Tip: This salad is also delicious topped on a freshly baked baguette slice for a hardy bite
