Recipe: Elote

Serves 4

  • 4 ears fresh sweet corn
  • ½ cup crumbled cotija cheese
  • ½ cup of grated parmesan
  • 1 Tablespoon ground cayenne or more to taste
  • 1 teaspoon salt
  • 1/2 cup mayonnaise
  • 1/4 cup butter, melted
  • 1 lime, cut into 4 wedges
  • 2 scallion
  • Zest of one lime
  • 4 short corn skewers

Cut the silks from the ends of the sweet corn. Prepare your grill or grill  pan and once grill pan is hot, grill the corn until all sides of corn are cooked until golden. Using a pair of tongs, pull the corn from the hot water and transfer to a baking sheet. Or remove from grill pan and allow to cool.

When the corn is cool enough to handle, use a serrated knife or other sharp knife to remove the kernels from the cob. Smear a little mayo on the bottom of a bowl and top with the corn kernels. Garnish with melted butter, grated Parmesan cheese, crumbled some cotija, lime zest, scallions, salt and cayenne.
